- 2 boneless skinless chicken breasts
- Salt to taste
- 1 cup all-purpose flour
- 2 large eggs
- 1 - 1.5 cups panko breadcrumbs
- Vegetable oil for frying
- 1 onion finely chopped
- 2 carrots diced
- 1 - 2 cloves garlic minced
- 1 tablespoon ginger grated
- 2 tablespoons curry powder
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon honey or sugar
- 1 – 2 green onions chopped (for garnish)
Pound and prepare the chicken.
