Ingredients

  • 200 g feta cheese
  • 400 g cherry tomatoes
  • 300 g pasta such as penne or fusilli
  • 4 cloves garlic minced
  • 50 ml olive oil
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

  • Preheat your oven to 200°C (400°F).
  • In a baking dish, place the block of feta in the center and surround it with the cherry tomatoes and minced garlic.
  • Drizzle olive oil over the feta and tomatoes, then season with salt and black pepper.
  • Bake for 30-35 minutes until the feta is soft and the tomatoes are bursting.
  • While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente.
  • Once the feta and tomatoes are done, remove from the oven and use a fork to mash them together until creamy.
  • Add the cooked pasta to the baking dish and mix well, incorporating the feta-tomato sauce.
  • If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
  • Serve hot, garnished with fresh basil and additional seasoning if desired.
