Ingredients

  • 12 oz spaghetti
  • 1 cup sun-dried tomatoes packed in oil
  • 3 cloves garlic minced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Salt and black pepper to taste

Instructions

  • Cook the spaghetti according to package directions until al dente.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  • Add minced garlic and red pepper flakes to the oil, sautĂ©ing until fragrant.
  • Stir in the sun-dried tomatoes and cook for another 2-3 minutes.
  • Once the pasta is cooked, drain it and reserve the cooking water.
  • Add the drained spaghetti to the skillet with the sun-dried tomato mixture.
  • Mix in the Parmesan cheese and adjust the consistency with reserved pasta water.
  • Season with salt, pepper, and garnish with fresh basil before serving.
