- 12 oz spaghetti
- 1 cup sun-dried tomatoes packed in oil
- 3 cloves garlic minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
- Salt and black pepper to taste
Cook the spaghetti according to package directions until al dente.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add minced garlic and red pepper flakes to the oil, sautéing until fragrant.
Stir in the sun-dried tomatoes and cook for another 2-3 minutes.
Once the pasta is cooked, drain it and reserve the cooking water.
Add the drained spaghetti to the skillet with the sun-dried tomato mixture.
Mix in the Parmesan cheese and adjust the consistency with reserved pasta water.
Season with salt, pepper, and garnish with fresh basil before serving.
