Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare a 9x9-inch baking dish by greasing it or lining it with parchment paper.
  • In a medium bowl, combine flour, sugar, baking powder, and salt.
  • Mix in the melted butter until crumbly.
  • Press the mixture into the bottom of the prepared baking dish to form the crust.
  • Bake the crust for 15 minutes until lightly golden.

  • Pour the lemon filling over the baked crust, spreading it evenly.
  • Bake for an additional 20-25 minutes until the filling is set and slightly golden on top.
