In a small bowl, mix cream cheese, powdered sugar, vanilla extract, brown sugar, and 1 tsp cinnamon until smooth.
Flatten each slice of bread with a rolling pin.
Spread 1-2 teaspoons of the cream cheese filling onto each slice, then roll up tightly.
In another bowl, whisk together eggs and milk.
In a shallow plate, mix granulated sugar and 1 tsp cinnamon (for coating).
Heat a skillet over medium heat and add a bit of butter.
Dip each roll-up into the egg mixture, coating all sides, then place on the skillet seam-side down.
Cook for about 2–3 minutes on each side or until golden brown all over.
Immediately roll each cooked roll-up in the cinnamon-sugar mixture.
Serve warm with maple syrup or a drizzle of cream cheese glaze.
