Cut the chicken breasts into tender-sized strips.
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan, minced garlic, Italian herbs, salt, and pepper.
Dredge each chicken strip in the flour, shaking off excess, then dip it into the egg, and finally coat it with the breadcrumb mixture.
For baking, place the breaded strips on a greased baking sheet. For frying, heat the oil in the pan and carefully add the chicken.
Bake in the oven for 20-25 minutes or fry for about 3-4 minutes on each side until golden brown.
Let the chicken tenders rest for a few minutes before serving.
