Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk at room temperature
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pure peppermint extract
  • ½ cup chocolate chips optional
  • 1 tablespoon crushed peppermint candies for topping

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine all the dry ingredients: flour, cocoa powder, baking soda, and salt.
  • In another bowl, mix together the wet ingredients: buttermilk, vegetable oil, eggs, and peppermint extract.
  • Gradually fold the wet mixture into the dry mixture until just combined.
  • If desired, fold in chocolate chips for extra texture.
  • Pour the batter into a greased loaf pan and smooth the top.
  • Sprinkle crushed peppermint candies on top for garnish.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
