- 1 pound boneless chicken thighs
- 1 ripe pineapple peeled and chopped
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1/2 cup soy sauce
- 1 tablespoon brown sugar
- 1/4 cup green onions sliced
- 1 teaspoon cornstarch mixed with 2 teaspoons water
- Salt and pepper to taste
Prepare the chicken by cutting it into bite-sized pieces.
In a bowl, combine soy sauce, brown sugar, and garlic.
Add the chicken to the marinade and let it sit for at least 30 minutes.
Heat olive oil in a large skillet over medium heat.
Add the marinated chicken to the skillet and cook until browned.
Stir in the chopped pineapple and cook for another 5 minutes.
Mix the cornstarch slurry into the skillet and stir to thicken the sauce.
