Gently fold in the mint chocolate chips and crushed peppermint candies.
Scoop tablespoon-sized balls of dough onto a silicone-lined or greased baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
Once cooled, roll the cookies in powdered sugar before serving or storing.
