Ingredients

  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour

  • 1/2 cup mint chocolate chips
  • 1/4 cup crushed peppermint candies

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together softened butter and powdered sugar until light and fluffy.
  • Add in the vanilla extract and mix until well combined.
  • Gradually add the flour and salt, mixing until just combined.
  • Gently fold in the mint chocolate chips and crushed peppermint candies.
  • Scoop tablespoon-sized balls of dough onto a silicone-lined or greased baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
  • Once cooled, roll the cookies in powdered sugar before serving or storing.
